This miso glazed salmon is one of those recipes that looks impressive but takes very little effort.
The glaze is simple: miso, mirin, sake and a touch of sweetness. Brush it over the salmon, cook until glossy and lightly caramelised, then finish with sesame seeds and spring onions.
It works just as well for a quick midweek dinner as it does on the BBQ when the weather is good.
Why Miso Works So Well with Salmon
Miso brings a deep savoury flavour that pairs naturally with rich, oily fish like salmon.
Once cooked, the miso glaze becomes slightly caramelised around the edges, while the salmon stays soft and juicy underneath.
It is also a very easy way to start cooking with miso if you have a jar in the fridge and are not quite sure what to do with it.
Ingredients
Serves 2.
- 2 salmon fillets
- 1½ tbsp SHOJIN MANIA Kura Miso
- 1 tbsp mirin
- 1 tbsp sake
- 1 tsp honey or maple syrup
- Toasted sesame seeds
- Finely sliced spring onions
How to Make It
Mix the miso, mirin, sake and honey in a small bowl until smooth.
Brush the glaze generously over the salmon.
If you have a little extra time, leave it for 10 minutes before cooking. If not, you can cook it straight away.
In the oven
Bake at 200°C for around 10 to 12 minutes, depending on the thickness of the salmon.
The glaze should look glossy and lightly caramelised.
On the BBQ
Place the salmon on a piece of foil or a suitable BBQ tray and cook until the salmon is cooked through and the glaze begins to caramelise.
Keep an eye on it, as miso glazes can catch quite quickly over high heat.
To Serve
Finish with toasted sesame seeds and spring onions.
We like it with a simple green salad, rice or chilled noodles in summer.
And if there is any extra glaze left in the bowl that has not touched the raw salmon, you can brush a little more over the fish towards the end of cooking.
A Simple Way to Use Miso
Miso is one of those ingredients that can do a lot with very little.
As well as salmon, try it in salad dressings, roasted vegetables, noodles, soups or even mixed with butter for corn on the cob.
A jar in the fridge goes a surprisingly long way.
