Bakumatsu Soy Sauce
"Muroji no Shoyu" is an authentic soy sauce made from locally sourced ingredients in Fukui Prefecture, including whole soybeans, wheat, rice, and water. It faithfully reproduces the original flavors and aromas inherent to its ingredients, offering a genuine soy sauce experience. Using traditional brewing methods from the late Edo period but with modern equipment and meticulous management, "Muroji no Shoyu" is crafted and brewed. This soy sauce has a history dating back to the first year of the Tensho era and represents the dedication to quality at the Muroji Brewing Facility.
Presently, this rare soy sauce makes up less than 1% of the total soy sauce production in Japan. It is crafted using only locally sourced ingredients and undergoes natural fermentation and aging for one year. This is a revival of "Kikusoy Sauce," which was first exported from Japan to Europe 150 years ago during the late Edo period. The product name is derived from its historical export under the English name "Soysauce" during the same period.
