Originally, it was produced at Eiheiji Temple, but currently, our company has taken over its production method.
It serves as a valuable source of protein for the ascetic monks who cannot consume animal-based foods such as meat and fish. Being consumed at the strict Eiheiji Temple, the product has a richer and more aromatic flavor, with an aging period approximately twice as long and a 1.2 times higher ratio of rice koji compared to common manufacturing methods.
Due to the higher ratio of rice koji, its characteristics become pronounced when cooked. It comes with a guarantee of safety, trustworthiness, and high quality.
